Care must be taken not to over cook, as it will dry out the meat and make it tough. Elk meat will cook faster than other red meats , so plan for quicker cooking times. As a general rule, a good way to cook elk meat is to sear the meat on high heat, to seal in the juices, and then to finish cooking it on lower heat to your desired liking. We suggest a slow cooking method to prepare roasts that will melt in your mouth. Frequent basting will be key to your success. BBQ elk meat on high to seal in juices then lower heat and cook to medium for best results.
